Simple Peanut Butter Cookies, a repost

This is a repost of my Simple Peanut Butter Cookies recipe.
Apparently lots of my photos have lost links and the 
Simple Peanut Butter Cookies recipe is just one of them.

I swear it's really simple and you can easily get the ingredients, ANYWHERE. 
I swear, just head down to your nearest NTUC Fairprice, or even any mama shop, 
you can find all of the ingredients needed.


1 CUP of Peanut Butter
1/2 CUP of SUGAR
1 EGG


COMBINE and MIX


COOKIE DROPS on BAKING SHEETS or oiled baking trays. 
Bake for 6 to 8 minutes @ 175 degree celcius



and, TADAH!! You can have your super-easy, simple as ABC PEANUT BUTTER COOKIES!

It's all about CHEESE

It all started when I was hungry one night, so I surfed around the net and found this super simple recipe.
It's simple and easy, all you need is CHEESE.

As a cheese lover, this recipe is great for a midnight snack.

Here I present you, CHEESE CRACKERS



Ingredients 

CHEESE  
any kind of cheese, mozzarella, cheddar etc. you can even use the packed sliced cheese for sandwichesrecommend to get the shredded ones 
Seasoning(optional) 
It adds a flavor to the cheese crackers. Try lemon pepper, salt & pepper, cinnamon or anything that you would like to add.

Items Needed 

Baking Paper 
only baking paper works, as for the others, the cheese will stick to it and don't even think of "oh I can put oil/butter" because there is oil in the cheese

Instructions

pre-heat oven at 170°C
place cheese over baking paper
bake at 170°C for 7-10 minutes or when it turned golden brown
served when cool



I got my baking sheets from Daiso.
It's cheap and good enough, for just $2
Look for them under the food section where all the baking and cooking products are.


Used Shredded Cheddar and Lemon Pepper for seasoning, both from NTUC.
I didn't buy the seasoning on purpose, it's something that my house already has.
It's like the ingredients can be found easily at home.

It's alright not to put any seasoning to the cheese, but it brings a different taste to it.
Trust me, it's even better, but that if you didn't put weird flavorings.



Placed the cheese and sprinkled some of the lemon pepper on the baking paper.
Yes, ONLY baking paper. 
I tried aluminium foil, and the cheese ended up sticking to the foil instead.
No butter and oil too as cheese consist of oil.
With baking paper, the cheese will nicely slide off after baking and cooling.


The cheese melts and baked fast, so I encourage you to remain there and look after it, you might never know whether it will over-baked.



It will look something like this after it's baked.
You can let it stay a little longer if you want it even more crunchier, but never let it burn.

See the oil there, it's all from the cheese.



It goes well with a cup of tea like Earl Grey too, maybe your new afternoon tea and snack.

[recipe] Matcha Shortbread Cookies

Few weeks ago I baked some Matcha Shortbread Cookies, and I am finally blogging about it with THE RECIPE ^^

Baked the cookies to give tonton's sister actually, but I made a little too many. 



Gave this bottle to tonton's sister.
I actually took one hour just to get the bottle decorated.
It was actually skippy peanut butter's container, can't tell right?
Cleaned it up, remove the label, etc. etc.
I always have scrap cloth lying around so, tadah. and a ribbon!! 
TRANSFORMED.

Anyway, back to the cookies.
I was google-ing around and found Martha Steward recipe easier to follow through.


The above recipe really makes a lot, so I cut the recipe in half, give and take.

Am going through the recipe step-by-step, but I will still type a full recipe at the bottom, for easier keeping sake?


Ingredients  

- 1 cup all-purpose flour  

 - 2 tablespoons of Matcha Powder- pinch of salt 

  - 1/2 cup (115g/1stick) UNSALTED butter, softened at room temperature 

 - 1/4 cup confectioners' sugar



This recipe can be used for Earl Grey shortbread cookies too, just sub the matcha powder with earl grey tea.
open the tea bags and dump it in.
The recipe above, takes around 2 tea bags worth, give or take.
As it all depends on individual likings.

You can find everything in NTUC, I swear, even the matcha powder which you should find under the international section instead.

Actually if you looked at my photo, I did not actually use all-purpose flour, but cake flour instead.
The outcome will be slightly different, texture wise but it's still alright.

It's always better to sift your flour as they will lump together, but I am really lazy, and cake flour are slightly finer so I do not really need to bother about sifting much?

Also, please, please, please remember to use UNSALTED butter.
I used the salted ones and even omitting out the "pinch of salt" you can still taste the saltiness of the butter, which is a no good at all.


Whisk flour, tea and salt in a bowl. set aside.


I poured in a little too much matcha powder here, cause I am really a tea person?
Plus, this was all I left in my tiny can of matcha powder, so might as well pour everything in?


Cream the butter and sugar in a separate bowl, until light and fluffy.Around 2-3 minutes if you are using the electric mixer, low-medium speed.



Slowly pour in the flour-tea mixture, over low speed with the electric mixer till everything are nicely combined.


I am still using the super old, hand held electric mixer which is actually a chore cause it's really tiring to hold it while mixing.
Mum refuse to buy anything new unless this old fellow decided to die on us, and that's still a maybe.

Anyone one or dear sponsors would like to nicely sponsor me or give me a electric mixer please.
I don't even need a super good one, but just one basic mixer will do fine.
I am still wishing.



Knead and roll the dough into a log, estimated 1 1/4 inches in diameter.
Place log on parchment paper.
Seal the tube by twisting the ends or you wrap with cling wrap like what I did.

Place the log into the freezer, for 45minutes to an 1 hour.


Seriously, do not put your dough for more than an hour, otherwise it will be too hard, and when it start melting it will be too watery.
45 minutes will be just alright.


This is what happened when the dough got too soft to be cut.

Pre-heat oven to 350 degrees (Fahrenheit) / 175 degrees (Celsius)
Cut logs into 1/4 inch thick slices.

Or you can use cookie cutter too for patterns and shapes.


Since mine was too soft, so I roll them into balls and pressed them flat instead.



Place them slightly apart as the cookies will slightly expand while baking.

Bake the cookies for around 13-15 minutes, rotating them half way through.
Let cool on sheets or cooling rack before serving or packaging.




You can always eat them over tea and coffee and would be perfect for a little tea-time snack.

It's really easy to make, but just time consuming.
Not to mention the cleaning part. ohmygee.

POST : 2011.11.06 banana cake

Just the other day I was baking and then came to the baking topic with Carol, and so we decided to bake together.

Banana cake and a surprise tiramisu.

I was super tired the day before, so I was sleeping in a lot, and I was only barely awake when the couple reached.
Talk about embarrassment and awkwardness.

We had lunch at Jurong Point's kopitiam, and then bought our ingredients from both the NTUCs.
Didn't had the exact ingredients for Tiramisu, so we had to improvise, but it was a major failure to do so.

Tiramisu was actually a secret baking plan that day.
Everyone except Andy knew about it. Carol wanted to give it to him as a birthday surprise.
I am sorry that it turned out real badly :(

Banana Cake was a huge success like before, it's really easy to bake, I swear.

2011.10.14 Peanut Butter Cookies

I baked Peanut Butter Cookies.

and then I am going to be so selfish, and not share the recipe! :P

Napped awhile as I was tired from baking cookies,
plus, the migraine is back to torment me too.

Woke up late, and the migraine wasn't any better.

It was already 6.45 when I left home, yeah, class starts at 6.50pm
I wasn't really well enough to go class, so I went to tonton's house instead.
Nua and watched tv there instead.

Cabbed home later, and sleep.

MOONCAKES

Like every other year, my house will be making mooncakes for the mid-autumn festival.
Mum bought the premix and ingredients, and was waiting for me to start making them.

I never ever tried making baked mooncakes before, as mum says that they are difficult to make, where she has friends who failed making them, lots.
Also, snow skin mooncakes are way easier to make too.
Plus, we normally just buy the baked one from one of those many, many years old traditional baking shops.
It's nicer too. Since it's TRA-DI-TION-AL. right?

Though my mould I bought frm Shop n Bake haven't arrive yet, our house do still have the traditional moulds.

Making snowskin mooncakes can seems easy, but yet tiring.
Reaching the end, my calculations start going haywire, with the proportion between the dough and the filling going crazy.

I used a 50g mould, thus the ratio shld go something like 3 (dough) : 2(filling).
It's just nice for me, I think.

or 50:50 if you want to have more filling?

I shall wait for the new moulds to arrive, and then ask Dolly over, and try making the Flavoured ones,
like Earl Grey, Coffee or even Matcha.

For now, here's the current ones that I made :D

and a simple, basic recipe for those who want to try:

made like 25-30 50g mooncakes

INGREDIENTS :
200g fried glutinous flour/gao fien
200g icing sugar
100g shorterning
200ml filtered cold ưater
drops of food coloring of your choice

Filling of your choice.
(you can easily get them at baking stores or even the normal lotus paste at NTUC, though the ones at baking stores taste nicer.)

STEPS: 

1. Mix the flour and icing sugar together.
2. Fold in the shortening. (Adding bits by bits and folding it in but it easier to mix them well)
3. Add in the water.

Now here's the part, if you want it to be flavoured?
Just mix in a little bits of earl grey, matcha or coffee to the water.

4. Form a dough
5.  drip a few drops of food coloring of your choice.
6. Let the dough rest for 15-30mins
7. (while resting you can actually prepare the filling) Measure your filling and roll them up into little balls shape

8. Measure your dough too and then wrap them with the filling.
9. Press into mould.

10. Put mooncake into fridge to chill.

* It will help a lot if you put some flour into the mould, so that the mooncakes can slip out easily :D

2011.07.23 cookie monster muffins



23rd July Leonard 誕生日.

Went skating to celebrate his birthday, with Duval, benson, tonton and me.
and I think they are hooked with it.
LOL, they had so much fun, even me too :)
I am snow ploughing well :)

Too bad I didn't get to hang around more to see the others, but managed to say hi to kelvin, maggie and akira.

and remember the cookie monster muffins I decorated?

 yep, they are birthday muffins for the birthday boy.
I seriously love the outcome for it.
Need a bigger container next time, so they won't be crushed.

and I saw becks at the rink~


she was there with some of the mass comm peeps, recognize a few faces.

Duval and Benson went off after skating, while Leonard, Tonton & I headed down to VIVO, and met up with weeteng for

HANNA.

weeteng and ruiting, went to shave their head for a great clause.
I do not have that courage to do that at all.

Since it was streetfest too, went up and see whether I will meet some friends there?

failed brownies and colorful frost


okay next!

22 April 2011. Friday.

GOOD FRIDAY, actually. Indeed good, at least for me.
There wasn't school, so I kinda sleep in.
Was in the mood, and since I didn't baked for quite a while, I went searching for recipes off net, and got myself my ingredients and baked :)

Didn't really used any special recipes, I was partially lazy actually, got brownie mix off rack at NTUC instead.
I did my own frost though, since I still have leftover creamcheese at home, lots actually. 750g left? 500g now, after baking.
Okay, I didn't really make the frost my own, jellybean helped.

He came over, like almost everyday, it's like a daily routine after school ><
We wanted to watch the movies we didn't watch on screen last time.

Back to brownies.

The brownies were kinda a failure, to me at least.

It was still edible though.
sad to say, it was too soft, way tooo soft in the inside.
kinda like molten chocolate cake instead of the normal brownies?
The first time I failed using the mix, like so depressing for me?
I been using the mix since Secondary School, should have gotten use to it right?
AISH.

Making the frost was fun, just mere butter + creamcheese + sugar. and food coloring for decoration purpose.
I can't seems to find the mixer, and mum wasn't at home for me to ask, so Jellybean kindly helped me to "fold" the butter and creamcheese together. Tough job, since I forgot to soften the creamcheese, and just used it straight out of the fridge.
They were hard to mix. Too solidified I guess.

But, it turned out well. A little too sweet, shall cut down on sugar next time.

Tips on baking. (ain't a good baker, but still, after all those time I baked?)
You can't really follow the amount in recipes?
Different people have different tastebuds.
Experiencing is the best way to get your own favourite and best recipes.
Recipes you found, can only be a good source and reference.
Trying out are the only way you will know whether things work.

The paragraph above, is my own opinion, but actually lots of bakers said the same thing.

Playing with food coloring can be crazy.
They stains, so you must be real careful with it.
I got colorful fingers after that.
you won't know how dark or light the color will turn out too. So, experiencing is the only way.

But I love them, they turned out real pretty. The colors I meant.

(The green was supposed to be blue, and blue was supposed to be purple, talk about mixing. weird)

Watched The Tourist.
Can't get rid of Jack Sparrow image of Johnny Depp, in any shows. ><
The plot wasn't that bad, wants more action though.

Piranha, got a scare at the end of the movie, where the adult piranha jumped out the screen suddenly.
I freaked out, shrieked, cover my face and start trembling.
Jellybean was super evil, all he did was laugh out loud, before he even start comforting me. damn.
It was funny and a little disgusting in a way or another, cannot stop covering my eyes though.
Boobies got eaten, oh well.

Baking

mum went genting today with my other aunties
i m starting to miss mummy!

hooray!!

i cant really sleep ytd.
so woke up with a bad headace

i went ntuc to get ingredients
cause i suddenly felt like baking

and then alvin called and asked to watch movie

i felt so lazy
i realise my house have only 2 eggs left
and the recipe need 4 eggs
but somehow the whole thing works well with just 2 eggs LOL





then rushed down to plaza sing to meet alvin, jes, yiping n soomin to watch
"how to train your dragon"

omg its so damn cute please
